Mexican Lasagna (freezer)


This Mexican Lasagna recipe is rich, satisfying, comforting, flavorful, cheesy, saucy and plain scrumptious!

Garnish with fresh tomatoes, olives, avocados, cilantro and sour cream if desired.




  • This meal is a freezer meal. It is recommended to thaw the lasagna before baking.
  • Can be baked from frozen but the time required to heat it will be increased and will vary due to differences in ovens.
  • Items are labeled GF or KF for a Gluten Free or Keto friendly option. However they are not prepared in a gluten or dairy free kitchen. It just indicates that I use gluten free items (example gluten free pasta)

We use lean ground beef, pinto beans and sweet corn are enveloped in the BEST bold, smoky, house made enchilada sauce then layered between tender lasagna noodles a creamy salsa verde spiked sour cream/cream cheese filling and both cheddar and Monterrey Jack cheese then baked to bubbling perfection to create a mountain of hot, meaty, cheesy, fiesta in each satisfying bite.
